Fitness Friday 2014 | Healthy Egg White Muffin Recipe

Well, since it’s now January and all of the holidays have past, I suppose it’s time to get back in shape. I’ve really had a hard time these past six months. “Things” have led to me feeling depressed which in turn have led to me letting myself “go”. And boy… I have REALLY let myself go badly.

I’ve decided to start my Fitness Friday posts back up, starting this coming Friday. We’ve shopped and bought only healthy food for me, Mike and the girls. Austin is such a picky eater – he’s going to have a rough time. Me and the girls have started exercising. We’re starting back up with the Revolt Fitness Program. And we will all be joining our local gym which is only about 4 blocks away from our house so me and the girls are hoping to start running together and possibly do some weight training too.

I shared the Revolt fitness program with you all last year. I tried it out but only lasted about 6 weeks before we moved, and then want on vacation… it was a long, chaotic summer. And unfortunately I quit. I had a great success with the program so I truly believe in it all the way. The Revolt program gives you an exercise and diet program with recipes that is so easy, it fits into your regular daily lifestyle. The food is all real food that you can make ahead of time for the whole week. It’s real food that you need to be eating permanently, for the rest of your life.

One of the recipes I loved is similar to the one I want to share with you today. Healthy Egg White “Muffins”. I call them muffins only because I baked them in a muffin tin.

Healthy Egg White Muffins

These Egg White Muffins are awesome for portion control – me and the girls are eating 2-3 per day and Mike is eating 4. The prep. is only about 10 minutes and they bake for 30 min. and then you have breakfast for a week. You can’t beat that!

Ingredients:

Ingredients are up to you! The Revolt recipe uses spinach, green peppers, red peppers and onions if I remember correctly. For these egg white muffins, I used:

  • Sausage (just a little!)
  • Green Pepper
  • Red Pepper
  • Onion
  • Shredded Cheddar Cheese

Instructions:

  • I browned the meat.
  • Spray Pam in muffin tins.
  • Fill the bottom of the muffin holes up with whatever ingredients you want. Not too much though, we are trying to keep these low-cal.
  • Then fill with egg whites.
  • Bake for approximately 30 min. on 350F.

Once finished and cooled, I stored them in baggies in the fridge and they are good for up to a week… we all get up at different times and each one of us can grab a few and warm them up as we’re ready. I add salt and pepper or hot sauce and these Egg White Muffins are yummy!

If you’re looking for a healthy breakfast that’s super easy and delicious – Egg White Muffins are the way to go! As far as the egg whites go – each Egg White Muffin should be approximately 50-75 calories and then depending on what you put in each one would total a bit more. I’m guessing they are easily under 100 calories each.

  1. these look really good but I am not a fan of egg whites at all so I am not sure if I would like them but I bet they would be good for my hubby 🙂 I may try to make some for him… do they need to be warmed up before eating them?
